High coolant temperature

Out riding yesterday and everything was fine until I saw a red triangle warning light and coolant temperature went from 77c to 135c! Stopped bike waited 5 minutes then all returned to normal??
Started up and rode 20 miles and it came on again. Seemed to be every time I turned a slow tight turn?
Got home and checked all levels, fans coming on ok.
Has anyone seen this before?
Battery on an optimate , so no issues with battery.
 
Has the coolant recently been changed/ topped up? If no, doubt it would be an air bubble. For the temperature to drop from 135 to normal in 5 minutes it would suggest that the temp wasn't actually 135, as it would take more than 5 minutes to drop 50.

Would have a look at the temp sensor, thermostat and wiring if it happens again. You can test the temp sensor resistamce with bowl of hot water and multi meter. Check YouTube for how to video.
 
Many thanks for your assistance. I kinda suspected that it may be a loose connection as the sensor failing would probably make it read high all the time.
Any idea where the sensor is for the temperature reading. I know that there are 2, one for the fans and other for the indication.
