I ride an 04/05,
I found that 180/55 does turn the tiniest bit quicker and also have more contact on the road when upright which stops it wearing down quickly if always on the commute if that helps?
On the other hand the 190/50 has more contact patch when at full tilt so gives you a bit more grip at full lean. I'd probably prefer a 190/50 on the track.
To be honest there's not much in it. Get a decent set of hoops and you won't care either way
