Heh,
just bought me some Talon sprockets ( 16f and 44r ) but not a new chain....yet! Do I have to replace the chain with a new one?

Also, I've managed to round off one of the rear sprocket carrier bearing nuts. Does anybody know the best place to get new ones?

Bike is a 2003 mille R with 4000 on the clock.

Always do the two together. Unless the chain is nearly new, the old chain will wear your new sprockets out in no time.

hard to tell really. there is still quit a bit of adjustment left.

I'm not sure that is a reliable indicator of chain wear.

Are the sprockets you are replacing worn? Not good.

Can you pull the chain back away from the rear sprocket. Not good.

Are any links tight? Not good.

Does the chain look well lubed and rust free? Good.

Does the chain run smoothly over the sprockets with rear wheel raised and rotated by hand? Good.

I can't remember where you get the information from but you can check chain wear by measuring a set number of links and comparing to original size. Should be fairly easy to find the figures on the net.
