Get a knife and a fork and carefully trim around the fried egg yolk making sure you dont burst it, once complete, gently slide fork under the yolk using your knive to prevent slippage being careful once again not to break the yolk. Et Voila yolk removed.

STL, the correct way to remove the yolk would surely be to crack the egg then carefully tip the yolk from half shell to half shell whilst the white drips out into the bowl you are working over.

The central yoke retainer comes off anticlockwise RSVJames. If you are lucky enough to have the original Aprilia tool kit under the seat, you will find a short extension looking bar that actually fits directly in the hole, which you can they place a socket on top of to crack it free.
